Palo Cortado is my favorite type of sherry... and Alvear produces some of the best!
Palo Cortado is an enological rarity. The wine begins aging in barrels under a veil of flor – a spontaneously formed layer of yeast that protects the wine from oxidation as well as imparting a distinct flavor. These barrels are destined to become finos or amontillados. But, for reasons unknown, the layer of flor weakens, exposing the wine to some oxidation. This gives the sherry characteristics of an oloroso – richer and nuttier than an amontillado. The result is a unique sherry that draws flavor characteristics from both styles.
Alvear’s Palo Cortado is exceptionally rare, as they are one of the few producers to only produce PC when the breakdown of flor occurs naturally. Additionally, this No 7 bottling is aged for an average of 20 years with some casks over 50 years old!
For me, this is as good as sherry gets!

“The NV Palo Cortado N7 is 100% Pedro Ximénez sourced from Montilla-Moriles. Aged for 20 years in soleras with casks over 50 years old, this mahogany-colored wine features complex aromas of dried fruits, saffron, licorice and caramel, with a faint Manzanilla-like note. Dry and rich, the umami-filled palate delivers oak and saffron flavors with a very long, tarry finish. This wine is a flavorful oddity, reminiscent of what Montilla-Moriles offered in the past."
