Produced from a small 1.12 hectare parcel that's located high on the hillside, right below where the castle used to sit. The oldest vines here were planted as far back as 1930 in rocky limestone soils and today they are farmed organically, producing low yields of exceptionally high quality fruit. The fruit is whole cluster pressed and aged in mostly neutral foudre and barrel for 12 months with minimal fining and filtering.
