DeFi Description
A special project with grape grower, Eric Steinbicker, we started with late hanging Montepulciano. We started fermentation with an enzymatic 10 Day carbonic maceration to highlight the fruityness of the grapes. Then we lightly crushed the grapes in our wooden basket press. Primary fermentation was carried out in neutral French oak barrels.
Fermented with native yeast.
