Dhondt-Grellet is a small grower house based in Flavigny. In 1986 Eric Dhondt and Edith Grellet decided to stop selling their grapes to larger producers and negociants, to concentrate their efforts in estate grown Champagne from their holdings in the Cotes de Blancs. Their son, Adrien Dhondt, has taken over the winemaking in recent years and he has taken this small producer to the next level, winning wide critical acclaim along the way. Adrien, still only in his 20’s, was awarded the prestigious vignerons of the year in 2017 in the “Trophees Champenois a Epernay”.
But now with wine industry professionals and consumers clamouring for these wines, they've become harder and harder to come by.
Dans un Premier Temps is Adrien's traditional Brut style Champagne, intended to represent the best of the three villages he works with. A blend of 50% Chardonnay from Sezanne, 30% Pinot Noir from Avenay Val d'Or and 20% old vine Pinot Meunier from Cuis. The base for this disgorgement is 2017 with reserve wines going back to 1986.

"Each of the three wines presented in the range from Dhondt-Grellet have 70% from the base vintage of 2018, with the remainder from perpetual reserve wine going back to 1986. The NV Champagne Dans Un Premier Temps Extra Brut is 50% Chardonnay, 30% Pinot Noir, and the remainder Meunier, with 2.5 grams per liter of dosage. It has attractive, ripe aromas of honeysuckle, apricot, and pineapple that translate to the palate with juicy fruit and tangerine citrus. This is drinking well now and makes for a wonderfully versatile wine. Disgorged in October 2021. Drink 2022-2032."

Disgorged in July 2020 with two grams per liter dosage and based on the 2017 vintage, Dhondt's NV Extra-Brut Dans un Premier Temps (2017) exhibits aromas of citrus oil, almonds, white flowers, mint and honeyed pears, followed by a medium to full-bodied, fleshy palate that's bright and pillowy, with chalky grip and a saline finish. Open and charming, it is vinous and seamless, offering a fine introduction to the domaine's style. As usual, it's a blend of Chardonnay from the Sézannais with Pinot Noir from Avenay Val d'Or and Pinot Meunier from Cuis.
