This lovely is a blend of Grenache (75%), Mourvèdre (15%), Syrah (10%). Palon's style is one that emphasizes elegance and finesse... in this outstanding vintage, this has resulted in an impeccably balanced wine that is locked and loaded with fruit - black cherries, blackberries and plums - and balanced by aromas of violets, red licorice and wild herbs. Bright acidity adds a level of freshness that has this baby singing with food. Classic French bistro food would be nice here... classic dishes like Coq au Vin, Cassoulet, Pot-au-Feu and Steak Frites. Don’t worry… you don’t have to go full-on French to enjoy this baby, just cook up something simple and enjoy!
Hmmm... and let's see what's cooking in town... well, I can only find one restaurant in the little hamlet of Vacqueyras, and they don't have a website. Neighboring Gigondas has a few. Ooohhh, the super fancy one looks nice. But, ah... there we go... a cozy little lunch spot. Let's check out the menu... you might have to zoom... raviolis, lasagne with zucchini and ricotta, Ceasar salad with chicken, beef tartare... oh... here we go... Camembert d'Isigny... warm and oozy from the oven, served with roasted potato and ham from the Alby plateau... with a glass (or two) of local red wine! Perfect!
Domaine Palon is located at the foot of the spectacular “Dentelles de Montmirail” on the gentle mid-slope of Gigondas. This is a very small estate with only 17 acres in Gigondas and 12 in Vacqueyras. Despite its size, the property and its owners have had a large impact on winemaking in the area. Jean Palon was the co-founder of the Gigondas Cave Co-operative and a member of the governing board from 1956-1978. His son Jean-Pierre Palon was the president of the Cave Co-operative from 1978-2001. The current owner, Sebastien Palon, represents the 4th generation of winemakers in his family. Adding to the rich history of his family, in 2003 he became the first of the Palons to bottle the wines under his family name.
