The nose is an absolute knockout, offering intense apricot, clementine, passion fruit and floral scents that you can pick up across the room. The flavors deliver what the aromas hint at – full, rich and intense, with vibrant acidity and a long, mineral-accented finish. There’s a savory quality on the finish that I cannot quite put my finger on… it balances out the intense fruit and imparts a mouth-watering sensation that has you craving more.The secret lies in the use of flor, a layer of naturally occuring yeast that covers roughly 80% of the exposed wine in barrel. Most are familiar with its use in Sherry, but it has been gaining converts in the fashioning of white wines, notably in the uber in-fashion wines of Jura. The flor adds a silky texture and a spicy twist, with hints of curry and white pepper. The acidity is high and vibrant, thanks to only partial malolactic fermentation – the process that imparts the characteristic “buttery” flavor of most Chardonnay. Only 35% new oak and no lees stirring means the grapes speak for themselves with just a hint of spice and oak.
