Currently a US exclusive online, this gem of a Champagne is harvested from the lieu-dit (single vineyard) “Les Evallons, planted in 1960. Planted to 100% Pinot Noir, the vineyard has a unique exposure, allowing for cooling breezes to slow the ripening of the fruit.
Aromas of cherry blossoms and peonies lead into notes of raspberry and cherries. Flavors of the same combine with peach and citrus in this rich, generous bubbly. Nice acidity makes this thirst-quenching and perfect as an aperitif. Beyond that, pair with light Mediterranean dishes. The winery also suggests French cheeses such as chaource or soumaintrain.
