92 pts Wine Advocate - The wine is a blend of 45% Pinot Meunier, 25% Chardonnay, 25% Pinot Noir and 5% “Other”. That’s a pretty high proportion of Meunier, folks. The result is a Champagne with more “plumpness” than you might find in more Chardonnay or Pinot Noir dominated blends. The aromas and flavors of fresh biscuits comes to mind. Countering this, though, is a relatively low measure of sugar – only 5.5 grams per liter. To put that in perspective, Brut Champagne can contain as much as 15 g/l of sugar. At 5.5 g/l, this wine could be classified as Extra Brut. That dryness, for me, balances the Meunier and makes the wine ridiculously drinkable, and a dream for food. Then, because these guys are THAT good, the wine undergoes malolactic fermentation – because they use such a low dosage, they feel the wine is better with lower acidity, and the roundness that comes from malolactic.

The NV Brut is pretty, delicate and understated, with hints of dried pear, flower and mint that are laced throughout. Soft and inviting throughout, the Brut is a great introduction to the Aubry Champagnes. The feminine, gracious finish only adds to the wine's considerable appeal.
