The Champers from RH Coutier come from Grand Cru vineyards in Ambonnay. With a warmer microclimate and heavier clay influence to the limestone subsoil, this is Pinot Noir country, known for its rich red fruit and lush wines. And yet, Coutier’s holdings are an anomaly, with 25% of their vines being Chardonnay. This is key to the house style, which seeks to marry the richness of Ambonnay fruit with a pure, racy style the family cherishes. To accomplish this, 1/3 of the wine, the Chardonnay fruit, does not go through malolactic fermentation, resulting in the steely, vibrant component to their bubbles. Additionally, neither of these wines sees any oak influence.
The result is “Opulence with tension” as Antoine Coutier describes it.
Very poetic description which I cannot match today. So I will just go with “Delicious!”

"The NV Brut Tradition Grand Cru is creamy and so expressive. Dried pear, ginger, spice and dried flowers lend quite a bit of aromatic nuance to this Pinot-based NV Champagne. Time in the glass brings out the natural resonance of Ambonnay. This is such a pretty and inviting Champagne. The current release is based on 2014, with 40% reserve wines blended in. Dosage is 6 grams per liter. Disgorged: January, 2021."
