Winemaker Bruwer Raats focuses on two different parcels of vines – one grown on decomposed granite, and the other grown in sandstone soil. He then separately ferments the grapes from the different soil types! He feels the decomposed granite brings a lime and mineral character, while the sandstone more topical fruit and structure. He is then able to blend the two together to achieve a harmony and balance.
Which I think is what gives this wine such a dual nature - the wine is immediately and hedonistically enjoyable, but it offers wave upon wave of flavor that changes as you drink up the wine. Flashy and substantive at the same time! It jumps out of the glass with exotic tropical fruit aromas and more than just a hint of crystallized ginger. Rich, lush citrus flavors follow up and and combine with creamy fruit to balance the vibrant acidity.
What to pair with? What not to pair with?! This is one of the most versatile whites you will come across and will complement everything from appetizers to a cheese course, from shellfish to rich halibut, even chicken and pork. And don’t be bashful with the spices – this baby can take it! Curry, anyone?
