So what is “saignee” Champagne? Most rose Champagnes are made by adding a portion of red wine to the white juice, mostly creating color and adding a small amount of red wine character. For saignee, the wine is made entirely from juice that has been left in contact with the skins for a period of time to extract color while retaining the characteristics of the red grapes. These Champagnes are darker, richer and more “vinous” than other rose.
