Galloni tastes literally hundreds of California Cabernet Sauvignons a year, from all of the top wineries in Napa and Sonoma. When he makes a proclamation like this I pay close attention.
This is a flat out gorgeous cabernet sauvignon with all the pedigree of wines at four times the price – an unbelievable value. Valravn’s backbone comes from vineyards in Sonoma’s prestigious Knights Valley and Moon Mountain AVAs. That mountain grown fruit really sets this wine apart, lending greater depth and minerality than I typically find in wines at this price point. There’s generous forest berry fruits at the forefront with a savory core of minerals and fine tannins conveying great balance. A smooth drinking medium-bodied cabernet with alluring fruit-forward style. Easy-drinking and ready to please at home after a long day. But this is not just a cocktail cab, there’s nuance and richness here too. You can happily pair this with a hearty roast dinner or stew and it will stand up really well.
Valravn Description
“The 2022 Valravn Cabernet Sauvignon is a blend of 90% Cabernet Sauvignon and 10% supporting varieties (Merlot, Cabernet Franc, Petite Syrah, Petite Verdot, Malbec, and Syrah). The grapes hail from four sub-AVAs of Sonoma County - Knight’s Valley (40%), Moon Mountain (20%), Alexander Valley (20%) and Chalk Hill (20%). Combining varietals, elevations, aspects, climates, and soil types allows us to blend the components for a seamless composition. In the cellar, hand-harvested and hand-sorted grapes undergo an extended cold soak followed by primary fermentation in stainless steel. Following primary fermentation, the wine is racked to French oak barrels (new, second-use, and neutral) for malolactic conversion and 16 months of aging. The barrel regimen is approximately 25% new oak, including Atelier, Sylvain, Taransaud, and Seguin Moreau cooperages.”
