Billecart’s Sous Bois is a throwback to the style of Champagne produced in the first half of the 20th century. Vinified entirely in oak barrels, Sous Bois is a full-bodied Champagne meant for the dinner table. And not as an aperitif or with delicate dishes. Rather, the Sous Bois begs to be served alongside the main course – seared scallops, mussel risotto, chicken breast with morel mushrooms, even a braised veal shank. Enjoy!

“The NV Champagne Sous Bois Brut pours a medium yellow to deeper straw hue, and the nose is warming and more generous with notes of toast, red fruit of ripe raspberry, spice, and espresso. The palate is rounded, with rich texture though dry, offering notes of orange peel and currant. It has a silky texture and a fairly long finish, with ripe concentration. It is drinking well now and should drink well over the next 15 years.” JD
