60% Ugni Blanc / 40% Colombard. Uh… don’t worry about it. At this price, let’s just focus on what this tastes like…
Fresh. Clean. Zippy and refreshing. Did I mention fresh? That’s because the winery transfers the grapes immediately after picking into isothermal tanks protected by a layer of inert gas. This keeps the grapes cool and prevents any oxidation before being transferred to refrigerated vats for fermentation. Dry ice is added to the equation to further keep the juice cold during fermentation. Finally, the finished wine is kept in storage at 25 degrees and only bottled to order. Yes, 25 degrees… below “freezing” but just above where wine freezes.
In short, the winery’s commitment to freshness is just shy of fanatical!
Man oh man, does this baby scream PORCH WINE! Crisp and clean with zingy notes of lemon, lime and green apple along with a salty minerality that gives the wine a mouth-watering aspect. I know, you’re thinking, “salty minerality? Really, Todd? Isn’t it a bit early to be sampling the wares?” Well, you’re just gonna have to grab a bottle or six and you’ll see… oh, you’ll see.
So what to have with this little gem? With the weather turning sunny and warm again this week and beyond, the aforementioned porch is a perfect pairing. Oh… food? Sure… if you were in Auch, the historic capital of Gascony, your menu would be rife with a million variations on duck – confit, foie gras, cured, cold, seared, in beans, and on and on. Seriously, these people live large! Still, there is some room to remain true to the region without embarking on a gustatory marathon. A mixed green salad (make sure there is frisee (curly endive)) with fresh goat cheese would be fabulous. Of course, some duck confit sprinkled over the top wouldn’t be out of line!
